Petane Merlot Cabernet Franc 2018
Black plum and green pepper leap out of the glass in this fruit forward, velvety textured wine. The supple tannins, medium acidity and fine grained oak is harmoniously entwined with a seductive splash of cocoa. To be enjoyed with Asado Hawke’s Bay lamb.
The grapes for this wine were grown during the Indian summer of 2018, from two distinct and different Hawke’s Bay appellations — Havelock North and Bridge Pa.
Handpicked from the two appellations on the same day, the grape bunches were destemmed and the berries were put into a chiller for a cold soak, then pumped into an open top vat where a natural ferment started by the indigenous vineyard yeast. A twice daily plunge and occasional pump over was performed to aerate the fermenting juice. After primary ferment the wine was pressed off skins and transferred into a collection of new (30%) and seasoned French oak barrels. A second natural malolactic fermentation took place, whereby the wine converts part of the malic (apple/sharp) acid to a softer (buttery) lactic acid, all the while being left to age on full lees for 18 months before bottling.
