The Drinking

A radiant light blush colour, this wine shows concentrated white stone fruits, bees wax and lanolin, underscored with bright energetic acidity. This wine is made for drinking in the warmer months with espetos de sardines and white crusty bread drizzled in olive oil.

The Growing

Warm dry conditions prevailed for the entire vintage and 2020 will go down as an all-time classic Hawke’s Bay growing season. These perfect growing conditions provided even ripening across our four noble varieties, allowing us to capture the vitality and bright natural acidity in the grapes.

The Making

Edelzwicker is a centuries old, Alsatian wine term taken from the German words ‘Edel’ (noble) and ‘Zwicker’ (blend). A true Edelzwicker is made from noble grape varieties all picked on the same day and from the same vineyard, giving a pure expression of the vintage and terroir.

All four of our noble grapes went into the making of this wine. Gewurztraminer, Pinot Gris, Chardonnay and Viognier were picked on the same day, destemmed and left to ferment for seven days on the beautiful skins to provide additional flavour, colour, tannins, phenol and esterification. The wine was then pressed off skins and the ferment continued until just off-dry in a stainless steel tank. Cooling was put on the tank towards the end of fermentation to keep a few grams of natural sweetness. This wine evolved and changed a great deal from end of fermentation until bottling time, we regularly tasted this wine every 7 - 10 days just to keep tabs on the inter play between the spent yeast lees and the wine.
