The Drinking

A brilliant, light golden-yellow colour, this wine shows concentrated white and yellow stone fruits on the nose, with nuances of exotic spices and honeysuckle. The mouthfeel is refreshing and lively with green juicy pear and rockmelon on the palate underlined by bright acidity and a lingering dry finish. This is an elegantly concentrated dry Pinot Gris that will develop richness over the next 5-7 years. Match with South East Asian and Japanese cuisine.

The Growing

Hot and dry conditions from mid spring until late summer made for the perfect vineyard set up right until the big rain event on March 7. Dry farming, crop thinning and well-timed leaf plucking gave us the confidence to hang the grapes out through the rain until we had concentrated and phenologically ripe fruit. The light sandy soil and under-vine story of grasses and clover helped to soak up the rain with no berry splitting. Our second pick towards the end of April was our latest yet, resulting in a brix reading of over 24, which has provided the wine with maximum depth and flavour.

The Making

Handpicked in two stages the earlier harvest gives the blend acidity and structure whilst the late pick balances the brightness with lush deep flavours. Once picked the grapes were whole bunch pressed and fermented in 100% stainless steel tanks. The juice was chilled and the solids were settled out overnight then racked. The juice was inoculated with our preferred yeast strain and slowly fermented to retain the delicate fruit flavour. Post ferment the wine was left to age on lees for 10 months before bottling which allows for extended cellaring potential.
